Sarah Kappel


Postdoctoral research fellow


I joined the research group in December 2025 as a postdoctoral research fellow. Leading up to this appointment, I have been involved in Animal Welfare research over the past 10 years, working with dairy cattle during my master's (University of Bristol, UK), riding school horses during my PhD project (University of Plymouth, UK) and again with dairy cattle during a 2-year postdoc at the University of British Columbia (Can). I also worked with laboratory animals (mice, rats) as a research assistant at the University of Bristol. My research focus across these different positions has been on developing and validating measures of emotional and motivational states in animals, using behavioural, physiological (heart rate variability, infrared thermography), and cognitive (attention bias) measures.

In my current role, I’m investigating indicators of boredom in young dairy cattle while housed in restrictive (indoor confinement) versus more naturalistic (pasture access) conditions.
